Red Poha

  1. Wash and soak 1.5 cups of Red Poha in the water till it softens.

  2. Drain the Poha in a colander. Set aside.

  3. In a pan, take about 1 tbsp of organic mustard oil.

  4. To this, add 1 tsp mustard seeds, 2-3 finely chopped green chilies, and 4-5 curry leaves.

  5. Fry 1 small chopped onion, 4-5 finely chopped beans and 1 small tomato for 2-3 minutes.

  6. To this, add Poha, salt to taste, turmeric and cook for 2-3 minutes.

  7. Garnish with some fresh lemon juice, coriander leaves and some roasted peanuts.
